Allira Sauvignon Blanc 2005
This wine is 100% Estate grown and composed of Sauvignon Blanc and Semillon from the Lakeview Vineyard and Sauvignon Blanc from the Upton Hill Vineyard. Careful tasting of the grape berries in the vineyard leading up to the harvest date is crucial in the making of a Sauvignon Blanc Semillon blend. Complexity and balance can be best achieved by aiming for a spectrum of fruit flavours from cut grass, to citrus, pome fruits and finally to tropical fruits at the riper end. The Lakeview Vineyard gave us fruit in 2005 that expressed lemons and pears with a hint of herbaceousness whilst the Upton Hill Vineyard portions were more overtly tropical in character. We only use the higher quality “free run” and no coarse “pressings” juice is employed in the making of the Allira Sauvignon Blanc. The clarified juice is inoculated with cultured yeasts and after 21 to 28 days, the fermentations are complete. The 2005 Allira Sauvignon Blanc was then painstakingly composed out of the separate batches and assembled. The blend is then further assessed and the palate fine-tuned for optimal drinkability. It is then carefully filtered in order to achieve brilliant clarity and microbial stability.
