Produced from premium Chardonnay grapes grown in the University vineyard on the Wagga Wagga campus and fruit from the cool climate Orange region in the Central Tablelands of NSW, and the Yarra Valley in Victoria. The wine has a bouquet of green apple and peach; the palate is full and soft with prominent melon and stone fruit flavours. The majority of the wine was fermented under strict temperature control to retain the fresh fruit flavours and then blended with a small quantity of barrel fermented chardonnay for added complexity. This is a fresh, fruit dominant wine with some complexity and a long, crisp acid finish.
